High Iron Gingerbread Hot Chocolate

Ingredients

  • 1 Dark chocolate bar (250g)
  • 4 cups (1L) coconut milk
  • 1 tsp powdered sugar
  • 1⁄2 tsp of vinegar (or the acid of your choice)
  • Lucky Iron Fish/Leaf
  • ¾ tbsp ginger
  • 2 cinnamon sticks
  • 1⁄2 tbsp nutmeg
  • 1 tbsp sugar or sweetener of choice
  • 2 tbsp cocoa powder
  • Dash of salt
  • Non-dairy whipped cream (optional for topping)
  • Gingerbread cookie crumbs (optional for topping)

Directions:

(Makes 4 cups)

  1. Set a medium pot to low-medium heat.
  2. Add 4 cups of coconut milk, the cocoa powder, sugars, vinegar, salt, and the spices to the pot. Stir until well combined.
  3. Roughly chop the chocolate and add it to the pot. Cover and stir periodically to help melt the chocolate. Allow the liquid to come to a boil.
  4. Add the Lucky Iron Fish/Leaf. Allow it to boil for 10 minutes then remove. 
  5. Bring the heat down to low. Cover and allow it to thicken for 5 minutes.
  6. Serve warm and top with whipped cream and gingerbread cookie crumbs if desired.
