Iron-Enriched Roasted CauLEAFlower Soup

When cauliflower is in abundance at the grocery store, we make CauLEAFlower Soup with a boost of iron. ⁠ @thepunnyvegetarian hooked us up with this delicious recipe that the whole family can enjoy! ⁠

DIRECTIONS:⁠

Preheat the oven to 420·F. On a baking tray, place cauli florets, garlic cloves, onions, and drizzle with olive oil. Bake for ⏰ 25 minutes.⁠

In a saucepan, bring the stock to a boil. Then add the bay leaf, cashews, and your Lucky Iron Fish/ Leaf. Continue boiling for ⏰ 10 minutes. ⁠

Remove the bay leaf and the Fish/ Leaf. Simply wash the Fish/ Leaf with dish soap and water like you would any other cooking utensil. Thoroughly dry it. ⁠

Add the roasted cauli florets, nutmeg, thyme, and salt + pepper. Use a hand blender to blend the soup till it is a creamy consistency. ⁠

There you have it!! Creamy, rich in iron, dairy free bowl of goodness!
