Here is an iron-infused soup recipe that adults and kids alike will love to enjoy this winter.
Its that time of the year - everyone is getting sick, everyone is running around trying to do last minute shopping, attending tons of social gatherings, writing finals... its just a lot. 🙃
This Chicken Soup with Alphabet Noodles will not only nourish you but it will also make you feel like a kid again! Here's what you need:
᠅ 4 carrots, peeled + shredded
᠅ 4 celery stalks, chopped
᠅ 1 large onion, peeled + sliced
᠅ 1 tbsp chicken bouillon (optional: veg bouillon)
᠅ 3 lbs, whole chicken (swap for mushrooms if making veg)
᠅ Enough broth to cover everything
᠅ Salt + pepper + pinch of turmeric
᠅ Handful of parsley, chopped
᠅ 1 cup, alphabet noodles
᠅ 1 Lucky Iron Fish
🥘In a large pot, heat some oil and sauté the onions, celery, and carrots till slightly soft.
🥘Next, add the chicken, bouillon, broth, and seasonings.
🥘Simmer uncovered until the chicken meat falls off the bones. Feel free to top up with extra water or broth if needed
🥘 If you see foam gather at the top, just scoop it out.
🥘 Use tongs to take out any big parts of the chicken. Pick any remaining meat off the bones and add it back to the soup.
🥘 Lastly, add the Lucky Iron Fish and the alphabet noodles. After 10 minutes, remove the Fish.
🥘 Adjust seasoning if needed. Once the noodles are cooked, turn off the heat and serve with freshly chopped parsley.
