➡️ In a pot, add everything except the coconut milk. Bring to a boil.
➡️ Once it starts to boil, add in the Lucky Iron Fish/Leaf. Cover and continue boiling for another 10 minutes.
➡️ Remove the Fish/Leaf after 10 minutes. Check if the carrots and butternut squash are tender. If it needs to cook more, reduce heat, cover with lid, and simmer for another 5-10 minutes.
➡️ Once everything is cooked, add in the coconut milk and blend using an immersion blender. (If you used fresh sage, make sure to remove it before you blend the soup!).
The iron enriched soup is ready! Drizzle with coconut milk and serve while it's still nice and warm.
