Iron-Packed Pumpkin Spice Smoothie

Ingredients

  • 1 cup non dairy milk of choice
  • ½ cup pumpkin purée
  • 1 tsp hemp seeds
  • 1 tbsp peanut butter
  • ½ tsp pumpkin pie spice
  • ½ tsp vanilla extract
  • 1–2 tsp maple syrup
  • 1 cup Iron-fortified ice cubes (made with Lucky Iron Fish water)
  • 1 tbsp blackstrap molasses
  • 1 Lucky Iron Fish/Leaf (to make the iron-fortified ice cubes)
  • 1/2 tsp of acid (to make the iron-fortified ice cubes)
  • 1L of water (to make the iron-fortified ice cubes)
  • 1/4 cup Whipped coconut cream (Optional topping)
  • 1 tsp crushed walnuts (Optional topping)
Directions:
- Bring 1L of water to a boil in a pot with the acid. Add the Lucky Iron Fish/Leaf and boil for 10 mins. Allow the water to cool and pour into an ice cube tray. Freeze overnight or until firm.
- In a blender combine all ingredients. Pour into a glass and top with whipped coconut cream and walnuts.
