Nori Noodle Soup

Lightweight and understated, this yummy soup takes an uncomplicated approach to healthy, broth based options. It’s inspired by asian flavours and its simplicity will leave you comforted. Not only will you have a tasty dish on your hands, but it’s ready in about 30 minutes so you don’t have to spend much time in the kitchen.

Makes 2 servings
Prep Time: 10 minutes
Cooking Time: 20 minutes

Ingredients 

4 cups No Salt Added Vegetable Broth
1 tsp. Lemon Juice
½ cup Green Chard, chopped
½ cup Green Onion, chopped
½ cup Firm Tofu, cubed
45 g Udon Noodles
1 sheet Nori (dried seaweed), cut into large squares

Instructions

  1. Pour vegetable broth into a large saucepan with the Lucky Iron Fish. Add lemon juice. Bring broth to a boil and simmer for 10 minutes.
  2. Remove Lucky Iron Fish after the broth has simmered for 10 minutes.
  3. Add the nori to the broth. Simmer for 2-3 minutes.
  4. Add the remaining ingredients and simmer for 7-10 minutes until noodles are cooked but still firm.
  5. Serve immediately.
