Nutritious Vegan Pho

Like all good Pho, there are layers of flavour and texture that go into this recipe. Let's get started:

Ā 

STEP 1: AROMATIC BASE:⁠

1ļøāƒ£ toast 2 whole star anise, 3 cloves, 2 cinnamon sticks in a dry stockpot on low heat for a minute⁠

2ļøāƒ£ once fragrant, add 1 yellow onion, quartered as well as 1 inch of ginger sliced thinly to the dry stockpot⁠

3ļøāƒ£ let it char a little for added flavour

STEP 2: IRON INFUSED BROTH⁠

1ļøāƒ£next, add 4 cups of vegetable broth along with 1/4 cup of tamari and turn heat to medium high⁠

2ļøāƒ£ bring to a boil, then add your Lucky Iron Fish/ Leaf⁠

3ļøāƒ£ after 10 minutes, remove the Fish/ Leaf and wash & dry it⁠

4ļøāƒ£ strain the broth to take out chunks of onions and ginger

STEP 3: ADDING UMAMI FLAVOUR⁠

1ļøāƒ£scoop out 1 cup of the iron infused broth⁠

2ļøāƒ£ add 1/4 cup of miso paste and stir till evenly combined⁠

3ļøāƒ£ pour it back in the stockpot with the broth and stir again⁠

STEP 4: TOPPINGS⁠

1ļøāƒ£ add your fav veggies: thinly sliced raw peppers/ cabbage/ jalepenos/ zucchini/ edamame/ steamed broccoli/ corn/ pan-fried mushrooms/ bean sprouts⁠

2ļøāƒ£ you can be fancy and also add miso-glazed baked tofu ⁠

STEP 5: ADDING FLAVOUR & SPICES⁠

1ļøāƒ£before serving, add freshly squeezed lime juice and freshly grated lime zest

2ļøāƒ£also add fresh mint, cilantro, thai basil⁠

3ļøāƒ£ add chili oil or sriracha to your liking ⁠
