Like all good Pho, there are layers of flavour and texture that go into this recipe. Let's get started:

STEP 1: AROMATIC BASE:ā
1ļøā£ toast 2 whole star anise, 3 cloves, 2 cinnamon sticks in a dry stockpot on low heat for a minuteā
2ļøā£ once fragrant, add 1 yellow onion, quartered as well as 1 inch of ginger sliced thinly to the dry stockpotā
3ļøā£ let it char a little for added flavour
STEP 2: IRON INFUSED BROTHā
1ļøā£next, add 4 cups of vegetable broth along with 1/4 cup of tamari and turn heat to medium highā
2ļøā£ bring to a boil, then add your Lucky Iron Fish/ Leafā
3ļøā£ after 10 minutes, remove the Fish/ Leaf and wash & dry itā
4ļøā£ strain the broth to take out chunks of onions and ginger
STEP 3: ADDING UMAMI FLAVOURā
1ļøā£scoop out 1 cup of the iron infused brothā
2ļøā£ add 1/4 cup of miso paste and stir till evenly combinedā
3ļøā£ pour it back in the stockpot with the broth and stir againā
STEP 4: TOPPINGSā
1ļøā£ add your fav veggies: thinly sliced raw peppers/ cabbage/ jalepenos/ zucchini/ edamame/ steamed broccoli/ corn/ pan-fried mushrooms/ bean sproutsā
2ļøā£ you can be fancy and also add miso-glazed baked tofu ā
STEP 5: ADDING FLAVOUR & SPICESā
1ļøā£before serving, add freshly squeezed lime juice and freshly grated lime zest
2ļøā£also add fresh mint, cilantro, thai basilā
3ļøā£ add chili oil or sriracha to your liking ā
