Sun-Dried Tomato Creamed Mushrooms & Rice

Easy iron-infused meal idea? We've got you covered! 🙌🏼 SUN-DRIED TOMATO CREAMED MUSHROOMS + RICE!

We simply had to share this #vegandinner recipe by @alexafuelednaturally⁠ - it is creamy, delicious, and now it is also iron-enriched! ⁠

1 Lucky Iron Fish⁠
1/2 cup raw cashews⁠
2 cups #IronWater
16 ounces cremini or shiitake mushrooms (or a mix of both) ⁠
1 tbsp oil ⁠
2 tbsp vegan butter⁠
2 tbsp nutritional yeast⁠
2 tbsp tomato paste⁠
5-7 sundried tomatoes, sliced ⁠
1 tsp garlic powder⁠
1/2 tsp Salt⁠
1/4 tsp Pepper⁠

Brown or white rice⁠ that is also cooked in Iron Water.⁠

Lucky Iron Fish, Iron Deficiency, Sun Dried Tomato Creamed Mushrooms & Rice

1️⃣ On medium heat, add the oil and the mushrooms to a large pan and sauté for 10 minutes. ⁠
Season with salt and pepper, add 1 tbsp butter and sauté for an additional 5 minutes.⁠

2️⃣ In a blender combine raw cashews and Iron Water. Blend on high until smooth and creamy. ⁠

3️⃣ Pour the cashew milk over mushrooms, then add nutritional yeast, additional tbsp vegan butter, garlic powder, tomato paste, chopped sun-dried tomatoes, stir to combine and lower heat & let simmer until the sauce slightly thickens.

4️⃣ Simmer for 3 minutes, taste and adjust seasonings as needed. Adding salt and pepper to your liking.⁠

5️⃣ Serve with rice cooked in #IronWater, top with fresh herbs.⁠

1️⃣ Boil 4 cups of water. Once boiling add 2-3 drops of any acidic ingredient (citrus, vinegar tomato paste, etc.), as well as the Lucky Iron Fish/ Leaf.⁠

2️⃣ Continue boiling for 10 minutes. Then turn off the heat and remove the Fish/ Leaf. ⁠

3️⃣ Use Iron Water to make rice and the creamy mushrooms!⁠
