Easy iron-infused meal idea? We've got you covered! 🙌🏼 SUN-DRIED TOMATO CREAMED MUSHROOMS + RICE!
We simply had to share this #vegandinner recipe by @alexafuelednaturally - it is creamy, delicious, and now it is also iron-enriched!
INGREDIENTS
1 Lucky Iron Fish
1/2 cup raw cashews
2 cups #IronWater
16 ounces cremini or shiitake mushrooms (or a mix of both)
1 tbsp oil
2 tbsp vegan butter
2 tbsp nutritional yeast
2 tbsp tomato paste
5-7 sundried tomatoes, sliced
1 tsp garlic powder
1/2 tsp Salt
1/4 tsp Pepper
🥣TO SERVE
Brown or white rice that is also cooked in Iron Water.
DIRECTIONS
1️⃣ On medium heat, add the oil and the mushrooms to a large pan and sauté for 10 minutes.
Season with salt and pepper, add 1 tbsp butter and sauté for an additional 5 minutes.
2️⃣ In a blender combine raw cashews and Iron Water. Blend on high until smooth and creamy.
3️⃣ Pour the cashew milk over mushrooms, then add nutritional yeast, additional tbsp vegan butter, garlic powder, tomato paste, chopped sun-dried tomatoes, stir to combine and lower heat & let simmer until the sauce slightly thickens.
4️⃣ Simmer for 3 minutes, taste and adjust seasonings as needed. Adding salt and pepper to your liking.
5️⃣ Serve with rice cooked in #IronWater, top with fresh herbs.
TO MAKE IRON WATER
1️⃣ Boil 4 cups of water. Once boiling add 2-3 drops of any acidic ingredient (citrus, vinegar tomato paste, etc.), as well as the Lucky Iron Fish/ Leaf.
2️⃣ Continue boiling for 10 minutes. Then turn off the heat and remove the Fish/ Leaf.
3️⃣ Use Iron Water to make rice and the creamy mushrooms!
