Creamy Lentil Soup

This cold weather vegetarian soup is full of protein and iron, and hearty enough for a main meal. It was shared with us by our friends at CoPower

Prep Time: 15min.     Total Time: 45 mins.      Servings: 2 servings


  • 1 Lucky Iron Fish
  • 3 tbsp butter (or 1/4 cup olive oil to make it vegan)
  • 1 large onion, chopped
  • 3 large carrots, chopped
  • 4 garlic cloves, chopped
  • 2 tsp cumin
  • 1 tsp curry powder
  • 1/2 tsp thyme
  • pinch of chili flakes (optional)
  • 1 large can of diced tomatoes
  • 1 1/2 cup of lentils (any kind will do)
  • 4 cups of veggie broth, and 2 cups of water
  • Salt and pepper to taste


  • Melt the butter over medium heat, and add onion, carrots and garlic
  • Cook this mixture for 10 minutes, until onions are fully translucent
  • Add Lucky Iron Fish and remaining ingredients and cook on medium to low heat for 10 minutes
  • Remove Lucky Iron Fish (wash and dry thoroughly), then continue cooking for 20 minutes
  • Finish with a hand blender to make it an even consistency
