DIRECTIONS:
Wash the rice till the water runs clear. Then soak it while you start the recipe.
Bring the almond/ coconut milk + the water to a rolling boil. Add 2-3 drops of lemon juice or any acidic ingredient.
Next, add the Lucky Iron Fish and continue boiling for 10 minutes. Remove the Lucky Iron Fish (or Leaf) at the end of 10 mins. Turn down the heat to medium.
Drain the rice and add it to the iron-enriched liquid. Stir until the rice is fully cooked - almost mushy in texture.
Then, stir in the sweetener, cardamom powder, and any of the optional toppings and cook on low heat for another 5 minutes.
Once all the flavours are combined and the texture is only slightly runny, you can turn off the heat.
