Super Iron-Fortified Marinated Beans

How to get *even more* iron from a bowl of beans? By fortifying them with extra iron using the Lucky Iron Fish!

1️⃣ Wash 2 cups of white beans thoroughly. ⁠
2️⃣. Soak them in 4 cups of iron-enriched water. This is water that has been boiled for 10 minutes with the Lucky Iron Fish or Leaf and 2-3 drops of citrus. ⁠
3️⃣ When left overnight, the beans will absorb the iron-enriched water. The next morning, transfer the beans and any remaining water into a pot. ⁠
4️⃣ If needed, add some more water so the beans are covered. Then cover the pot and let the beans cook until fully tender. ⁠
5️⃣ Make a simple marinade: olive oil + red wine vinegar + dijon mustard + finely chopped onion + sumac and any other seasonings you like. ⁠
6️⃣ In a bowl, properly mix the beans along with the marinade. Top with any herbs of your choice. ⁠

Enjoy right away or store in the fridge up to 5 days.⁠
