Easy & delicious iron-packed green curry
Creamy, vibrant, and packed with fresh flavor — this green curry is the kind of comforting bowl you’ll want on repeat. Especially as it also delivers an iron boost with each bite.
Ingredients
1. In a pan add coconut oil, green curry paste, soya sauce, maple syrup, coconut milk, lime juice and vegetable broth. Mix well and bring to a boil.
2. Cut the tofu into large cubes and place in a bowl with soya sauce, rice wine vinegar, cornstarch, garlic powder, onion powder and maple syrup. Mix until the tofu is fully coated. Place in the airfyer at 400F for 10 minutes. Flip then cook another 10 minutes or until crispy.
3. Add the Lucky Iron Fish/Leaf to the pot and boil for 10 minutes then remove and add the chopped pepper and snap peas.
4. Add the cooked tofu to the broth. Allow it to simmer for 5 minutes.
5. To serve, add rice to a bowl and pour the broth over top. Top with chopped nuts and fresh cilantro. Consume warm.
