Iron-Fortified Mashed Potatoes

Ingredients

2 lbs Russet potatoes

1⁄2 tsp Black pepper, ground

2 tbsp Salt

1 tsp Garlic powder

1 tsp Nutritional yeast

⅓ cup Vegan Butter, unsalted

1⁄2 cup Non-Dairy Milk

1⁄2 tsp Vinegar

Lucky Iron Fish/Leaf

  1. Add the potatoes to a large pot. Fill with 1L of water and bring to a boil. 
  2. Boil for 20-30 mins or until almost soft. Add the vinegar and the Lucky Iron Fish and boil for 10 minutes. Remove the Lucky Iron Fish after 10 minutes and continue boiling the potatoes until soft if desired.
  3. Strain the potatoes and reserve a ½ cup of the water. 
  4. In a bowl combine the potatoes, butter, milk and spices using a masher or an electric mixer. Slowly incorporate the water until creamy.
