High-Iron Dairy-Free Pancake Recipe

Ingredients

  • 2 eggs
  • 1 cup All-purpose flour
  • 1 tbsp granulated sugar
  • 2 tsp baking powder
  • ⅛ tsp salt
  • 1 tsp artificial vanilla extract
  • Oil for cooking
  • 1 cup of iron water made with the Lucky Iron Fish/Leaf
  • ½ tsp vinegar (for the iron water)
  • To make the iron water:
    • Fill a pot with 1L of water and add the vinegar.
    • Bring to a boil.
    • Once boiling add the Lucky Iron Fish/Leaf and continue to boil for 10 minutes.
    • After 10 minutes, remove the Lucky Iron Fish/Leaf from the water and allow the liquid to cool.
    • We will use 1 cup of this water in the recipe. The rest can be used in other recipes, drinks, or just consumed as is.
  • To make the pancake batter:
    • In a large mixing bowl, whisk together the dry ingredients (flour, baking powder, sugar, and salt).
    • Once combined add the wet ingredients (eggs, vanilla extract, and iron-fortified water). Mix well.
  • Lightly oil a pan and place over medium-low heat.
  • Pour ¼ cup of batter onto the pan to form pancakes.
  • Cook until bubbles form on the surface and edges start to set (2-3 minutes).
  • Flip and repeat on the other side until golden brown.
  • Repeat with remaining batter.
  • Serve with toppings of your choice!
