High-Iron Dairy-Free Pancake Recipe

Ingredients
- To make the iron water:
- Fill a pot with 1L of water and add the vinegar.
- Bring to a boil.
- Once boiling add the Lucky Iron Fish/Leaf and continue to boil for 10 minutes.
- After 10 minutes, remove the Lucky Iron Fish/Leaf from the water and allow the liquid to cool.
- We will use 1 cup of this water in the recipe. The rest can be used in other recipes, drinks, or just consumed as is.

To make the pancake batter:

In a large mixing bowl, whisk together the dry ingredients (flour, baking powder, sugar, and salt).
- Once combined add the wet ingredients (eggs, vanilla extract, and iron-fortified water). Mix well.

Lightly oil a pan and place over medium-low heat.

Pour
¼ cup of batter onto the pan to form pancakes.
- Cook until bubbles form on the surface and edges start to set (2-3 minutes).
- Flip and repeat on the other side until golden brown.
- Repeat with remaining batter.
- Serve with toppings of your choice!
