Iron-Fortified Pumpkin Spice Overnight Oats

Ingredients
To make the iron-fortified water:
- Bring 1L of water to a boil. Add the lemon juice and the Lucky Iron Fish/Leaf. Boil for 10 minutes then remove the Lucky Iron Fish/Leaf and allow the liquid to cool.
To make the oats:
- Combine all listed ingredients in a jar and mix well in a container of your choice and refrigerate for minimum 4hrs or overnight.
- When ready to serve, top with the whipped coconut cream, sprinkle with extra pumpkin spice (optional), and add the cinnamon stick.
