Iron-Fortified Pumpkin Spice Overnight Oats

Ingredients

40g of oats

⅓c pumpkin puree

½c iron-fortified water made with the Lucky Iron Fish/Leaf

1L of water (to make the iron-fortified water)

The Lucky Iron Fish/Leaf

½ tsp of lemon juice (to make the iron water)

1 tsp of hemp seeds

1 tbsp of maple syrup

1 tsp of vanilla extract

½ tsp of pumpkin spice

FOR TOPPING

⅓ Whipped coconut cream (For topping)

1 cinnamon stick (optional)

To make the iron-fortified water:

  • Bring 1L of water to a boil. Add the lemon juice and the Lucky Iron Fish/Leaf. Boil for 10 minutes then remove the Lucky Iron Fish/Leaf and allow the liquid to cool.

To make the oats:

  • Combine all listed ingredients in a jar and mix well in a container of your choice and refrigerate for minimum 4hrs or overnight.
  •  When ready to serve, top with the whipped coconut cream, sprinkle with extra pumpkin spice (optional), and add the cinnamon stick.
